The omega 6 content of some food sources can be a problem for the health conscious, as can the high cholesterol content when foods high in saturated fats are consumed with a high intake of omega 6 or omega 7. For this reason, many research groups are examining the link between the omega 6 content of oils and the risk of coronary heart disease. Other groups are doing experiments with plant sources of unsaturated fats and are focusing on reducing the unsaturation of the fats to prevent the development of atherosclerosis from atherosclerotic plaques.
